1. Kyoto-Style Grilled Salmon

What you need:

• 4 salmon steaks, 1 inch thick
• 1 clove garlic, minced
• 1 tbsp. minced green onion
• 1/2 tsp. minced ginger root
• 1/3 cup soy sauce
• 1/4 cup orange juice concentrate
• 2 tbsp. vegetable oil
• 1 tbsp. olive oil
• 2 tbsp. tomato sauce
• 1 tsp. lemon juice
• 1/2 tsp. prepared mustard

In a shallow baking dish, thoroughly combine garlic, onion, ginger, soy sauce, orange juice concentrate, vegetable oil, tomato sauce, lemon juice and mustard. Add salmon steaks to the mixture and turn to coat. Cover and refrigerate for 1 hour. Remove fish from marinade then pour mixture into a small saucepan, bring to a boil. Pre-heat your grill for high heat and lightly oil grates. Brush salmon steaks with olive oil before cooking on the grill for 5-10 minutes, turning once. What you need:

• 3/4 kg. raw firm fish (halibut, salmon or tuna), cut in chunks
• 4 cups pineapple chunks
• 1 large red onion, cut into wedges
• 2 garlic cloves, crushed
• 3 tbsp. minced ginger
• 2 cups pineapple juice
• 1 tbsp. cornstarch
• 2 tbsp. soy sauce
• 1 1/2 tbsp. white vinegar

In a small saucepan, mix pineapple juice, cornstarch, ginger, garlic, soy sauce and vinegar. Simmer for about 7 minutes until slightly thickened. Add fish and pineapple chunks to mixture. Allow to cool, cover and refrigerate for 30 minutes. When ready, thread fish, pineapple chunks and onion wedges alternately onto skewers. Cook on a pre-heated grill until fish is flaky. Serve with rice.

3. Classic Grilled Cod

What you need:

• 2 cod fillets, cut in half
• 1 lemon, juiced
• 2 tbsp. chopped green onion
• 2 tbsp. butter
• 1 tbsp. Cajun seasoning
• 1/2 tsp. lemon pepper
• 1/4 tsp. ground black pepper
• 1/2 tsp. salt
Season the fish with Cajun seasoning, salt and two peppers. In a small saucepan, melt butter over medium heat. Stir in onion and lemon juice for 3 minutes until onion is softened. Pre-heat grill for medium heat and lightly oil grates. Cook cod for 3 minutes per side, basting with butter mixture frequently. Once done, allow fish to cool before serving.
